This homemade vegetable broth is full of flavor and perfect for all Caveman Code dishes. It's a simple and healthy base for soups, stews, and other meals.
Ingredients:
• 2 large carrots, chopped
• 2 celery stalks, chopped
• 2 large onions, quartered (with skin for extra color)
• 1 large leek, sliced (use both the white and green parts)
• 1 zucchini, chopped
• 4 garlic cloves, crushed
• 1 fennel bulb, chopped (optional)
• 1 bunch fresh parsley
• 1 bunch fresh thyme
• 1 bunch fresh rosemary
• 2 bay leaves
• 10 black peppercorns
• 2 liters water
Instructions:
1. Prepare the vegetables: Wash all the vegetables thoroughly and chop them into large pieces. There's no need to finely chop them since they will be strained later.
2. Heat the pot: Heat a large stockpot over medium heat. Add the vegetables (carrots, celery, onions, leek, zucchini, garlic, and fennel) and dry-fry them for a few minutes to enhance their flavors. Stir occasionally to prevent burning.
3. Add herbs and water: Add the parsley, thyme, rosemary, bay leaves, and black peppercorns to the pot. Pour in the water.
4. Bring to a boil: Bring the mixture to a boil. Once the water is boiling, reduce the heat to low and let the broth simmer uncovered for about 1 to 1.5 hours.
5. Strain the broth: Remove the pot from the heat and strain the broth through a fine sieve or cheesecloth into a large bowl to remove the vegetables and herbs. Press down on the solids with the back of a spoon to extract as much liquid as possible.
6. Cool and store: Allow the broth to cool and store it in airtight containers in the refrigerator for up to a week, or freeze it in portions for longer storage.
