For the avocado sauce:

  • 1 ripe avocado

  • Juice of 1 lime

  • 1 clove garlic, minced

  • 1/4 cup olive oil

  • Black pepper, to taste


Instructions:

Wraps:

  1. Prepare the quinoa flour batter: In a large bowl, mix quinoa flour, water, olive oil, and black pepper until smooth.

  2. Cook the wraps: Heat a small amount of butter in a skillet over medium heat. Pour a small amount of batter into the pan and tilt the pan to spread the batter evenly. Cook the wrap for about 2-3 minutes on each side until lightly golden. Repeat until the batter is used up.


Filling:

  1. Cook the meat: Heat the butter in a large skillet over medium heat. Add the meat and cook until browned and cooked through, about 5-7 minutes. Remove the meat from the pan and set aside.

  2. Fry the vegetables: Add the bell peppers, zucchini, red onion, and garlic to the same pan. Add ground cumin, smoked paprika, dried oregano, and black pepper. Fry the vegetables until soft and lightly caramelized, about 5-7 minutes.

  3. Combine: Return the meat to the pan with the vegetables and mix well.


Avocado Sauce:

  1. Blend the ingredients: In a food processor or blender, combine the avocado, lime juice, garlic, and olive oil. Blend until smooth. Season with black pepper.
