2 large sweet potatoes, diced
2 zucchinis, sliced
2 red bell peppers, sliced into strips
4 tomatoes, diced
500 grams lean ground beef
1 onion, finely chopped
2 cloves garlic, finely chopped
1 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon paprika powder
1 teaspoon dried oregano
1/2 teaspoon chili powder (optional, for extra heat)
Fresh parsley or cilantro, finely chopped (for garnish)
Instructions:
Preheat the oven: to 200°C (392°F).
Prepare the sweet potatoes: Place the sweet potato cubes on a baking sheet, drizzle with a little olive oil, and bake in the preheated oven for 20-25 minutes, or until tender and lightly golden.
Cook the ground beef: Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté until soft and fragrant. Add the ground beef and cook until browned and cooked through.
