Ingredients:
4 salmon fillets
3 leeks, sliced into rings
2 red bell peppers, sliced into strips
1 zucchini, sliced
2 carrots, thinly sliced
2 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon dried dill
1 teaspoon dried thyme
Black pepper, to taste
Juice of half a lemon
Fresh parsley, chopped (for garnish)
Instructions:
Preheat the oven: to 200°C (392°F).
Prepare the vegetables: In a large bowl, mix the leeks, bell peppers, zucchini, carrots, and garlic with 1 tablespoon of olive oil. Add the dried thyme and black pepper to taste, and mix well.
Roast the vegetables: Spread the vegetables evenly on a baking sheet lined with parchment paper. Roast in the preheated oven for 20-25 minutes, or until they are tender and lightly browned.
Prepare the salmon fillets: Rub the salmon fillets with the remaining tablespoon of olive oil, dried dill, and black pepper. Heat a large skillet over medium heat and place the salmon fillets skin-side down in the pan. Cook the salmon for about 3-4 minutes on each side, or until cooked through.
Plate and serve: Remove the vegetables from the oven and distribute them onto plates. Place the salmon fillets on top of the roasted vegetables. Drizzle with lemon juice and garnish with fresh parsley.
