Enjoy a delicious and healthy lunch with these vegetable egg wraps. They are easy to make, nutritious, and perfectly aligned with the principles of the Caveman Code!
Ingredients:
4 large eggs
1 zucchini, cut into thin strips
1 red bell pepper, cut into thin strips
1 handful of spinach
1 small red onion, thinly sliced
2 cloves of garlic, minced
1 tablespoon olive oil
Black pepper, to taste
1 teaspoon dried oregano
Fresh parsley, chopped (for garnish)
Instructions:
Whisk the eggs: Crack the eggs into a bowl, add a pinch of black pepper and the dried oregano. Whisk well.
Cook the vegetables: Heat the olive oil in a large frying pan over medium heat. Add the garlic and cook until fragrant. Add the onion, zucchini, and red bell pepper. Cook for 5-7 minutes until the vegetables start to soften. Add the spinach at the last moment and cook until wilted.
Make the egg wraps: Heat a small frying pan over medium heat and lightly grease with olive oil. Pour a quarter of the egg mixture into the pan and swirl the pan around so the egg mixture covers the bottom. Cook the egg until fully set and remove from the pan. Repeat this process to make a total of four wraps.
Fill the wraps: Lay each egg wrap on a plate and evenly distribute the vegetable mixture over the wraps.
Roll the wraps: Roll up the egg wraps and, if desired, cut them in half.
Serve: Place the rolled wraps on a serving plate and garnish with chopped parsley.
